Southern Blue Whiting is a deep-sea fish found in the cold, sub-Antarctic waters to the south of New Zealand. Typically caught at depths of 400 to 600 metres, these slender, silvery-blue fish can grow up to half a metre in length. Their firm yet delicate white flesh and clean, mild flavour make them a favourite for classic fish dishes and an ideal choice for crumbing and frying.
